Hey y’all! I hope everyone had a fabulous Hump Day! For a short week, it feels like this week has been a normal week with how busy I’ve been at work. I’m very ready for the weekend and some R&R. Plus, Tyler got us tickets to the NASCAR race so he and I are going and my parents are joining us! This will be my first ever NASCAR race (well, one that I actually attended instead of just tailgating in the parking lot) so I’m pretty excited.
Tyler frequently has requests for things he wants me to make for dinner but not the normal dinner requests you might expect. Most people request dinner favorites like mac ‘n cheese or spaghetti and meatballs. Not Tyler. I get requests for things all the way from coq au vin to she crab soup. Since most of these are pretty time consuming it usually takes me months a while to get around to making them. Another one of his off the wall requests has been Korean Beef Tacos.
Since Asian food isn’t exactly my forte, I’ve been putting this off like the plague. Until I ran across Korean Beef Short Ribs at Trader Joe’s on Monday that is.
It should come as no surprise to you that Trader Joe’s had yet another delicious concoction but this is a must try! We (and by we I mean Tyler) literally cooked the meat on the grill for 5-10 minutes and were ready for assembly. I grabbed a bag of coleslaw mix to use instead of standard shredded lettuce and then we topped it with cheese and sour cream. Since this was “Asian” cuisine, I opted for Sriracha for my hot sauce of choice for the evening.
No lie, these may have been the best tacos ever. The meat had great flavor and was way better than standard tacos. Best of all, it came together in less than 20 minutes so it is a great weeknight meal. Aaand I may or may not have suggested we have it again for dinner tonight.
In other news, today was not a good day diet wise for me. It started out well with a grapefruit before work.
Then, I had a Blueberry Pecan KIND Bar and some strawberries and grapes
…and then I snacked on some Pretzel Crisps.
And by some I mean almost half the bag. But really, Jalapeno Jack? I should have known I wouldn’t be able to control myself. Those things are seriously addicting!
A little while later, I broke out my lunch which was broccoli slaw and shaved brussel sprouts with a scoop of guacamole and some Sriracha.
But who doesn’t need something sweet after lunch? Clearly I did because I ate a very generous handful of DOTS.
Already feeling guilty, there was leftover Panera in the breakroom so I snacked on half of an Asiago Roast Beef sandwich. Like really Ryan, was that necessary? Not at all but it was quite tasty.
For dinner, we used up the rest of the coleslaw mix and had homemade coleslaw with BBQ from Buzz and Neds. While this was delicious and the coleslaw has very little mayo and was fresh, it was still the icing on the cake after the day I had.
However, tomorrow is a new day! My alarm is set for 5:45 and you better believe I’ll be out there running my little heart out and back on track with my eating. Slip-ups happen but you’ve got to get back on track and not be too hard on yourself!
