Happy Monday! I hope you all had a fabulous weekend! It was rainy and humid ’round these parts but I still managed to get plenty of relaxing in.
I started my day off on Saturday at the crack of dawn bright and early for my training team run. We had 5 miles scheduled that morning but it was pouring down rain. And when I say pouring I mean pouring! Our runs are only canceled if there is lightening so I threw on my rain jacket and got out there!
Much to my surprise, I ran our 5 miles in under 50 minutes despite all the rain! My shoes were squishing and I had puddles of rain my my sleeves but I felt great after the run. Not too shabby, eh?
After my run, I went home and changed/showered and then went and had an hour long massage. Hey, I earned it!
The rest of my weekend involved a lot of delicious but not so great for me food and none of it was beauty detox approved! I was eager to get back on the grind this morning and set my alarm a little earlier than normal so I made sure I could squeeze in 4 miles.
It’s really starting to get light later in the mornings but its nice to have cooler mornings. After my running slump last week, my run on Saturday and my run this morning had me feeling much better!
Under 40 minutes with Bella and her multiple potty breaks and sit down strikes as I like to call them was fine by me!
To get back on track diet-wise this morning, I had some sliced strawberries and red grapes. Oh, and a hazelnut flavored coffee with unsweetened vanilla almond milk (not pictured).
The fruit didn’t tide me over for very long so I broke out my Thai Lime and Chili Cashews from Trader Joe’s before 10 o’clock…
Since I’m a creature of habit, I packed another loaded spinach salad with half of an avocado on top. My Mom recommended I try out Bragg’s Healthy Vinaigrette so used that instead of my standard balsamic vinaigrette. I have to say, this stuff was pretty good! And best of all, it doesn’t need to be refrigerated so I can just leave it at my desk and not have to pack dressing every day.
It’s the little thing, y’all.
After I ate my salad, I ran a quick errand and then came back and got some more work done. I must have worked up an appetite because I was hungry again at about 2:00 so I warmed up a cup of Organic Roasted Red Pepper and Tomato soup with a drizzle of Sriracha mixed in for an extra kick. I grabbed this while I was at Whole Foods the other day and it was alright but I think making it homemade would be 10x better. I’m thinking this recipe?
For dinner, I got Tyler to try out Quinoa Pasta for the first time. I personally thought it tasted like normal pasta but a little more gritty. Once we topped it with our meat sauce and topped it with freshly grated Parmesan and chopped basil, I didn’t even notice. Tyler, on the other hand, probably won’t be a repeat customer unless I sneak it in on him. Men!
For dessert, I made Tyler some Peanut Butter Banana Soft Serve while I tried a Gluten Free Chocolate Cupcake I grabbed at Whole Foods on Saturday. I had an epic cupcake fail ’cause somehow all of the icing ended up off of my actual cupcake. Good thing was, I actually don’t like a lot of icing so I just dipped my bites in the icing so I eliminated eating as much as I probably would have! I ate about half of it and saved the rest for tomorrow.
Well, I’m gonna go watch some TV with Ty and try to relax for the rest of the evening. Goodnight y’all!
