Happy Monday!
I got my Foodie Pen Pal shipment in the mail today and can’t wait to share it with you guys! I’m putting mine in the mail tomorrow and hope my Pen Pal enjoys hers! In other news, I was bit by the Pioneer Woman bug last week. Ok, so I didn’t just get bitten by the PW bug but I did get the immediate urge to make this sandwich when I saw it on her site last week.
It’s far from rocket science and I get that. But, adding on chipotle mayo takes this from an average BLT to sandwich heaven.
Now, this recipe comes with a warning. I saw her recipe only called for some of the adobo sauce and, being the glutton that I am, decided I needed some extra heat and added in two peppers. TWO PEPPERS! While the mayo was delicious, there was a fire burning in my stomach immediately after finishing the sandwich. I then proceeded to run around my kitchen chugging water and trying to find something to eat to cool it down.
Since I consider myself to be able to handle a good amount of heat and I wanted to cry after eating this, I highly suggest you tone it down. One pepper will do just fine.
Despite my burning stomach, this was one of the best sandwiches I’ve had in a long time. Not that PDub would ever lead us astray. I should have listened to her to begin with. She is the ultimate…well, everything.
BLT on Whole Wheat Bread with Chipotle Mayo
Adapted from The Pioneer Woman
- 2 slices whole wheat bread
- 2 slices applewood smoked bacon
- 2 leaves romaine lettuce
- 2 slices beefsteak tomato
- 3 tbs mayo
- 1 chipotle pepper in adobo sauce
For the mayo:
Combine mayo and chipotle pepper in a food process. Pulse until fully combined. Allow to rest in the fridge while you prepare the rest of the sandwich.
For the sandwich:
Cook bacon either in a pan or in the microwave until crispy. I cooked mine in the microwave for 2 min and 30 sec and it was perfect.
Toast bread until golden brown. Spread mayo on each slice of bread. Layer on tomato and lettuce.
Well, I’m off to clear off a few things from my DVR and hit the sack early. My 7:00am dentist appointment this morning is starting to catch up with me. I’m still kicking myself for scheduling it that early.

I love BLT’s but rarely have one. I need to fix that ASAP! Adding a little spice never hurts either!
