Hey there! I hope y’all had a fabulous weekend! We had a ton of fun at the race on Saturday! Well, tailgating for the race anyway, even if it was cold and raining. I can’t wait to do it all over again in September with hopefully warmer temperatures and sunnier skies!
Since it’s the week of Cinco de Mayo I figured I’d start the week off with a round-up of some of my favorite Mexican treats!

Guh, Mexican food is easily one of my favorites. Especially since I had it for lunch today. I have a problem. Wish I had a pork shoulder in my freezer so I could have Chipotle burrito bowls for dinner tomorrow…
