Happy Hump Day y’all! It was a gloomy, rainy day around here but the sun is supposed to shine tomorrow! Unfortunately, that’s going to be short lived because its supposed to thunderstorm on Saturday during my race. Swell.

But enough about the weather. Let’s get down to the good stuff, shall we?

Breakfast. The most important meal of the day. Or so they say anyway (that rhymes). This is the meal that helps get your day started to keep you going. And if I do say so, its arguably the best meal of the day.

While, deep down I’m an eggs and bacon kind of girl, some mornings I want something fresh and fruity. I’ve been a huge fan of the Strawberry and Blueberry parfaits at Starbucks but can’t, or really want, to afford spending $8 on breakfast every morning.

So, I gathered all of the ingredients at the grocery store and created my own and its lower in calories. This delicious breakfast only has 231 calories and will keep you full all morning long. Can’t complain about that!

Now, I have to give credit where credit is due. I would have continued buying my parfaits on my occasional trip to Starbucks and eating instant oatmeal at the office or eggs if I miraculously have extra time. Tyler was the one who suggested parfaits for breakfast. Man, am I glad he said something!

I usually portion out the granola into snack size Ziplock bags when I buy a new bag. That way I can just grab it and throw it in my bag and be on the go. You could even get a granola bar and crush that up and throw it on top.

Strawberry Parfait

  • 1/2 cup Light Vanilla Yogurt (I like Dannon Light and Fit)
  • 1/2 cup strawberries, sliced
  • 1/4 cup granola (I like Bear Naked Original Protein)

Add all ingredients together and stir to combine. If making in advance, store granola separately so it doesn’t get soggy.

Now, I’m off to finish last night’s episode of Private Practice and then start my new book! I finally finished The Hunger Games series and I have to say, I’m happy with the ending but the way they got there was…interesting. Its kinda depressing knowing my next book won’t involve Katniss, Peeta and Gale. Have they come up with a name yet for Hunger Games fans? Whatever it is, I’m definitely one of them.
