So, I apologize for my absence yesterday. I got all set up with my computer to write my post for the night (a little later than planned but that’s neither here nor there) to find out WordPress was down for scheduled maintenance. They may or may not have had notifications up all weekend about it but who has time to remember that on a Monday? Certainly not me.

I hope you didn’t miss me too much. ;)

What I did do was bring you something super delicious. Better yet, make that saucy and delicious. Anything that’s saucy is good with me.

I am a sucker for a good buffalo chicken wrap and have been known to order one pretty much everywhere that has one on the menu. And if they only have a grilled chicken wrap listed, you better believe I’m asking for some hot sauce for dipping!

So why not bring it into your own kitchen? Chances are you have most of the ingredients already in your fridge.

So whip this baby up already!

Buffalo Chicken Wrap

  • 1 chicken breast, grilled and sliced
  • 1 whole wheat tortilla (I used La Tortilla Factory)
  • 1/2 cup chopped romaine lettuce
  • 1/4 cup shredded Pepper Jack cheese
  • 1/4 cup Franks Red Hot
  • 4 tbs ranch dressing

Grill a chicken breast in a pan for about 3 minutes per side. Let it rest for a minute or two and slice it into thin strips.

Place chicken strips into a bowl and add in hot sauce. Toss until chicken is well coated.

Lay out your tortilla and spread 2 tbs of ranch in a circular motion. Sprinkle your cheese and lettuce.

Add in buffalo chicken and roll up your wrap. Slice in half before serving. Serve the remaining 2 tbs of ranch for dipping.

Clearly, this recipe isn’t rocket science but its just one of those comfort food recipes that is always sure to leave you feeling satisfied. Who needs all of those fried wings anyway?
